Cassava Flour Bread

Incredients:

  • 2 ½ cups Fortii premium cassava flour
  • 1 cup tapioca starch (helps with elasticity and texture)
  • 2 teaspoons active dry yeast
  • 1 ½ cups warm water (110°F/43°C)
  • 1 tablespoon sugar (to activate the yeast)
  • 3 large eggs
  • ¼ cup olive oil (or melted butter)
  • 1 teaspoon salt
  • 1 tablespoon apple cider vinegar (helps with texture and rise)

Instructions:

  1. Activate yeast by mixing it with warm water and sugar; let sit for 5-10 minutes until foamy.
  2. In a large bowl, mix cassava flour, tapioca starch, and salt.
  3. In a separate bowl, whisk together eggs, olive oil, and apple cider vinegar.
  4. Combine the yeast mixture and egg mixture with the dry ingredients to form a sticky dough.
  5. Knead gently, place the dough in a greased loaf pan, and let it rise for about 1 hour.
  6. Preheat oven to 350°F (180°C).
  7. Bake the bread for 45-55 minutes, until golden brown.
  8. Let it cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before slicing.
